Taverna Fiorentina, which has been turning out terrific food since it opened a couple of years ago in a Cobb Parkway shopping center, proves that inspired restaurateurs can make magic, even in a strip mall setting.
In fact, co-owners Paolo Tondo, the Italian-born chef, and Madrid native Jasmin Reyes Scott, the sommelier, have created an intimate, lively place in an unexpected and modestly scaled storefront. The unpretentious warmth of their welcome is a factor. So is the loyal clientele they’ve built up. Even on a chilly weekday evening, the room was nearly full. Which proves that everybody loves a neighborhood tavern where the food is irresistible and they know your name. If they don’t know yours yet, get in the car and go.
Several talented chefs have had the helm here, but now Tondo himself is running the kitchen and creating the menu. His work is authentic – well, he trained back home in Tuscany – and simultaneously inventive. Could his degree in electromechanical engineering account for that?
Take for instance, his deconstructionist approach to the Caesar salad: the anchovies and egg – a whole soft-boiled one – remain exactly what they are rather than being blurred into the dressing. Another example is a special appetizer, carpaccio di polpo (octopus). Strictly speaking, carpaccio is raw meat but this has been boiled then forced salami-like through a tube. Thin, pretty slices – cream-colored, with pink-tinged, blossom-like irregular edges – are laid on a plate and topped with a crisp little salad. The octopus retains none of that chew-it-forever texture but, indeed, feels like tender meat in the mouth. Language cops may object, but IMHO Tondo can call it carpaccio if he wants.
